Ayam BBQ Chicken

INGREDIENTS

  • 1/4 cup vegetable oil
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 1/4 teaspoon ground black pepper
  • 8 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 2 cloves garlic
  • 5 small onions, cut into 2 inch pieces
  • 2 red bell peppers, cut into 2 inch pieces
  • skewers

DIRECTIONS

  1. In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
  2. Preheat the grill for high heat.
  3. Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
  4. Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

Kuah Kacang Basic

kuah kacang basic

bahan2:

kacang tanah
bawang merah
bawang putih
halia
belacan
cili giling (bnyk nak digune)
air asam
serai
garam & gula merah

1. goreng kacang tanah tanpe minyak dgn api yg sgt kecil.....goreng sampai kacang rase 'masak'
2. blend kacang sampai halus (jgn halus sgt....nanti x crunchy)
3. tumis bwang merah & puth yg ditumbuk.
4. tumis cili giling & sedikit belacan...sila guna bnyk sikit cili giling. sbb kacang tanah ni boleh menurunkan kepedasan & rasa cili.
5. bila dah cerai minyak, masukkan kacang tanah. kacau sampai sekata
6. masukkan air asam jawa, kacau & tunggu sampai menggelagak
7. masukkan serai
8. masukkan garam & gula merah

lebihkan gula merah, sbb sambal kacang lebih sedap kalau manis & berwarne merah.

Mee Hailam

mee kuning
bawang merah

cili giling

sayur: carrot, kobis,capsicum, cauli flower

1. rebus ketulan ayam & lobak, ketepikan
2. tumis bawang merah & putih (lebihkan bawang putih)
3. tumis sedikit cili giling
4. masukkan rebusan ayam & lobak, bersame2 airnye
5. masukkan sayur2 yg lain. masukkan sedikit kicap
6. masukkan sos cili, sos tomato & sos tiram & sedikit serbuk black pepper
7. kalau kurang masin, tambah kicap masin sedikit demi sedikit
bubuh tepung jagung kalau nak pekatkan kuah

7. bubuh garam & gula merah

kalau nak sedap, buat manis sambal tu

jgn goreng lame2 sangat. nanti sotong kecut & hilang kekenyalannye.

1. tumbuk halus bawang merah, putih & halia, pastu tumis
2. masuk & tumis sekali cili giling sampai cerai minyak (sampai masak)
3. masukkan sos tomato, sos tiram & hirisan labu bawang besar. continue masak sampai bwang agak lembut
4. masukkan ayam yg dah digoreng tadi.
5. adjust gula & garam. biasenye lebihkan gula

Easy Choc Brownies

  • 2 cups white sugar
  • 1 cup butter
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup walnut halves

DIRECTIONS

  1. Melt the butter or margarine and mix all ingredients in the order given.
  2. Bake at 350 degrees F for 20 to 30 minutes in a 9 x 13 inch greased pan.

Bread Pudding

INGREDIENTS (Nutrition)

  • 6 slices day-old bread
  • 2 tablespoons butter, melted
  • 1/2 cup raisins (optional)
  • 4 eggs, beaten
  • 2 cups milk
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Yum!!!! I used Pepperidge Farm cinnamon swirl bread, left out the raisins, added a 1/4 cup of brown sugar, used gourmet whipping cream instead of milk and topped it with a vanilla sauce recipe I found on this site. This recipe is SO delicious and SO easy to make (no scalded milk or water baths here - yippee!). The first time I made it I used 4 eggs like the recipe calls for, but I thought it was way too "eggy" (it almost made a layer of scrambled eggs on the bottom of the pan!)... so the second time I made it with only 3 eggs and it was PERFECT! Both times I made it with cheap store-brand white bread and it was absolutely delicious, so you don't need to use an expensive bread to get good results. I topped each serving with a dollop of homemade whipped topping (whip 1/2 pint of whipping cream together with 3 tablespoons powdered sugar and 1/2 teaspoon vanilla)... and then I sprinkled a little cinnamon on top of that. I started using this recipe nearly THREE years ago, and figured it was time to say so. I've read some of the reviews, and if this helps, I've tweaked a little, too. I don't usually like to share my secrets, but this one's free: keep the egg quantity, use half and half instead of milk; turbinado sugar adds a warmer flavor than white. Add some extra bread (a couple slices worth of ANY kind - I love the varying textures and colors), cram it with walnuts and 1/4 teaspoon of black walnut extract; use nutmeg instead of cinnamon with the black walnut flavor, ground ginger without. Exotic. I've topped this bread with thinly sliced pears in a pinwheel design (nicer flavor and softer texture than apples) and sprinkled the tiniest bit of brown sugar over them before baking. Warm with whipped cream is best, still it's a great start to any day as breakfast. Thanks, Ellen. I've been appreciating you for a while and would give you 10 stars if I could!

Ayam Berempah

Salam. Last time saye buat ayam berempah. Main campak2 je,,,,,terus menjadi. so nak kongsi sikit resepi nye....

ketumbar

pastu, blend je sekali semua ni & gaulkan dgn ayam. (make sure jgn berair sgt tau....takat lembap2 gitu je)
jgn blend halus sgt. kalau boleh, biarkan berurat sikit. sbb bile berurat2 rempah tu, cam sedap pulak bile makan ngan nasik.

kalau nak sedap, potong ayam kecik2, supaye rempah ni mudah meresap. kalau nak sedap lagi, peram rempah & ayam lame2 sikit. dalam sejam ke.....

pastu goreng dgn minyak cam biase smpai ayam masak. time goreng tu, letak daun kari pun boleh jugak. biar tambah wangi.

sedap tau. 1st time saye buat terus menjadi. sedap pulak tu. bau die sungguh menyelerakan. kalau nak pedas, lebih kan cili merah tu....

kalau nak cantik, hidang atas daun salad. hehehe. (biar nampak cam student culinary punye masakan)....cube la ye. assalamualaikum

Onion RIng + Breadcrumb

NGREDIENTS (Nutrition)

  • 1 large onion, cut into 1/4 inch slices
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup milk, or as needed
  • 3/4 cup dry bread crumbs
  • seasoned salt to taste
  • 1 quart oil for frying, or as needed

DIRECTIONS

  1. Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  2. Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  3. Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  4. Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

DIRECTIONS

  1. Preheat oven to 250 degrees F (120 degrees C).
  2. Using tongs, place bread slices directly on oven racks. Leave in oven until hard and golden brown, about 30 minutes; darker if you prefer. Remove and cool on wire rack.
  3. Crumble slices into a large bowl until reduced to fine crumbs, or place in bowl of food processor and process until fine.

Bancuhan Goreng Pisang

BATTER 1
  • 1 biji pisang tanduk
  • 1/2 cawan tepung serbaguna + 1/4 cawan tepung beras
  • 1/2 sudu kecil kapor makan
  • 1/2 sudu besar garam
  • 1/2 sudu kecil serbuk kunyit
  • 1 cawan air suam
  • sedikit minyak panas (sebelum tuang air suam)
BATTER 2
Ingredients
  • 100 g rice flour
  • 30 g plain flour
  • 1 level tbsp sugar
  • ¼ level tsp salt + some 'kapur makan'
  • 1 ½ tbsp sesame seeds
  • 150 ml water
  • 1 bunch cooking bananas such as pisang abu, pisang raja or pisang awak
  • Oil for deep frying


  • BATTER 3

    Ingredients:

    • 125g (1 cup) plain flour
    • 80g (1/2 cup) rice flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 250ml (1 cup) water
    • Oil, for deep frying
    • 4 large or 8 small firm ripe bananas, peeled (and cut into sections if using large bananas)

    Kuih CornFlake Bermadu

    Bahan-bahan ( dalam 60-70 cawan mini cookies )

    • 250gm cornflakes (kotak kecil)
    • 125gm butter (1/2 buku)
    • 1/2 cawan gula perang (tambah kalau suka manis)
    • 5 sudu makan madu (saya guna golden syrup masa ni sebab tak ada madu)
    • manik warna warni untuk hiasan

    Cara-cara

    1. 1campurkan_bahan
      Campurkan butter dan gula dan masak atas api perlahan hingga gula larut bersama butter
    2. 2cairkan
      (saya terlebih rajin so masuk microwave je dalam masa 2-3 mins tapi kena kacau setiap min)
    3. 3masukan_madu
      masukkan cornflakes ke dalam adunan yang dah cair dan masukkan madu (masa ni saya guna golden syrup)
    4. 4aduk_sampai_rata
      aduk sampai rata
    5. 5masukkan_acuan
      masukkan dalam acuan dan taburkan manik warna warni dan bakar selam 10-15 mins atau sampai dasar kekuningan (jap je tau)

    • Setengah buku butter @ 125g

    2. dalam periuk, campurkan koko,milo,air,gula. Dengan api sederhana, kacaukan sampai semua dah larut

    4. kecilkan api, masukkan telur..kacau sampai agak2 pekat (lbh kurang 30 saat).padamkan api
    5. masukkan pula biskut yg dah dipatahkan tadi.kacaukan sampai semua biskut dh di selaputi cokelat.(sukatan biskut terpulang pd citarasa. kalo nak byk cokelat gune sket ajer...)

    Cara-cara

    1. blender bilis, telur, bawang dan air bersama hingga semua hancur
    2. gaul tpg dan yis sekejap, masukkan semua bahan dan gaul rata. Perapkan sekejap lebih kurang 30 minit

    ROti Bun Basic (utk berintikan Kacang Merah)

    Bahan-bahan ( 12 biji )

    • 120 ml air
    • 250 g tepung roti
    • 30 g telur
    • 10 g susu tepung
    • 40 g mentega
    • 40 g gula kastor
    • 1/2 camca teh garam
    • 1 camca teh instant yeast
    • 1/2 camca teh bread improver dan 1/2 camca teh bread softerner (optional)
    • BAHAN2 LAIN:-
    • Inti kacang merah secukupnya
    • Sedikit mentega utk disapu

    Cara-cara

    1. Masukkan kesemua bahan mengikut turutan kecuali "BAHAN2 LAIN", ke dalam bread maker. Pilih setting utk doh dan on kan. Tunggu sampai siap.
    2. Keluarkan doh dan tumbuk utk membuangkan udara. Bahagi 12 dan bulat2kan. Rehatkan 10 minit.
    3. Isi dgn inti kacang merah dan biarkan naik sekali ganda (lebih kurang 35 minit). Bakar dalam oven yg telah dipanaskan pada suhu 180C selama 12 minit. Keluarkan dan sapu mentega pada permukaan roti ketika roti masih panas.

    DOnut PintaL

    Bahan-bahan ( 8 biji )

    • 200g tepung roti
    • 20g gula
    • 1/2 sudu kecil garam
    • 1 sudu kecil dry yeast
    • 140ml susu segar
    • 20g butter
    • minyak masak untuk menggoreng
    • sugar powder

    Cara-cara

    1. 1
      Masukkan tepung, gula dan garam ke dalam mangkuk. Kacau.
    2. 2
      Buat lubang ditengah. Masukkan susu dan dry yeast. Kacaukan sedikit.
    3. 3
      Masukkan pula butter
    4. 4
      Kacau sehingga sekata
    5. 5
      Bila dah jadi begini. Keluarkan dari mangkuk dan letakkan atas papan canai.

      Uli sehingga tak melekat ditangan

      Buatkan bentuk bulat
    8. 8
      Masuk semula ke dalam mangkuk. Tutupkan dengan plastik wrap atau kain lembab. Biar naik 2 kali ganda

      Buat finger test untuk uji doh naik ke tidak. Kalau lekat kesan jari, bermakna dah naik.

      Canaikan biar jadi bentuk seperti dalam gambar lebih kurang 15cm

      Bahagikan kepada bahagian. Rehatkan selama 5-6 minit

      Uli biar jadi bentuk panjang

      Kemudian pulaskan seperti dalam gambar

      Rapatkan kedua-dua hujung. Doh akan jadi berpintal seperti dalam gambar. Lekat kuat-kuat antara hujung supaya tak terbuka semasa menggoreng. Penaikkan lagi sehingga 1.5 kali ganda.
    15. Goreng dengan api sederhana sehingga nampak perang. Sekali-sekala perlu dibalik-balikkan supaya betul-betul masak.

    Nasi Ayam

    • Untuk rebus
    • -1 ekor ayam dipotong ikut suka besarnya (x potong pun boleh)
    • - 2 ulas bawang putih
    • - 2sm halia yg diketuk
    • Untuk perap
    • >1 sudu besar kicap pekat
    • >1 sudu besar sos tiram
    • Madu lebah
    • >1cm halia
    • >2 ulas bawang putih
    • >sedikit kicap cair
    • Untuk nasi
    • - 5cwn beras
    • - 3 sudu besar butter
    • - 1cm halia- ditumbuk
    • - 4 ulas bawang putih -ditumbuk
    • - air rebusan ayam tadi secukupnya
    • - sedikit garam.
    • Bahan sos
    • > 5biji cili merah
    • > 5 ulas bawang putih
    • > 2cm halia
    • > 1 sudu teh cuka, garam, gula
    • > 1/2 cawan air
    • Untuk sup
    • @lebihan air rebusan ayam
    • @1 biji bawang besar kisar
    • @rempah sup
    • @garam
    • @daun sup yg dihiris.

    Cara-cara

    1. Ayam dipotong ikut suka besarnya (x potong pun boleh)..bersihkan dan di lumur dengan 2 ulas bawang putih yg ditumbuk dan 2sm halia yg diketuk..dan rebus hingga empuk
    2. Toskan ayam dan perap dengan bahan-bahan untuk perap selama 15-20min. Goreng hingga garing.
    3. Basuh beras dan toskan. Panaskan butter, tumis halia dan bawang putih hingga garing. masukkan beras, terbit bau, masukkan air rebusan ayam secukupnya dan garam. Masak seperti biasa.
    4. Untuk sos-blendkan semua bahan diatas. boleh ditambah tomato sos/sos cili jika suka. Boleh juga dimasak sebentar (jika suka)
    5. Untuk sup- air rebusan ayam didihkan bersama bawang besar, rempah sup, garam dan daun sup tadi.

    Fluffy Pancake

    INGREDIENTS

    • 1 cup all-purpose flour
    • 1 tablespoon sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 egg
    • 3/4 cup milk
    • 1/4 cup shortening, melted, or just 2 spoon of oil

    DIRECTIONS

    1. In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
    2. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.

    Puri (Indian Dish)


    Mix together in a bowl:
    2 cups Indian whole wheat flour
    1/2 Tablespoon vegetable oil/or Ghee
    salt to taste
    Slowly add about 3/4 cup warm water, just enough to form a firm dough, and knead till smooth. Cover, let rest at least 1/2 hour, and knead again briefly. If resting more than 1 hour, punch and knead dough again before rolling out.
    Divide into small balls about golf-ball size, and roll out into 6" rounds on an oiled board. Heat vegetable oil in a wok or saucepan. Add a little salt to the oil to keep it from smoking. Fry the puri one at a time, holding them under the oil on the first side until they puff. Turn and fry till light brown; drain.
    Serve as soon as possible; these breads are not as good later.
    Puri are traditionally served with any or all of the following: Chana, Black-eyed Pea Curry, Spinach Dal, Potato Curry, Brussels Sprouts, and anything with yogurt in it.

    Mix ingredients together to make dough, add water slowly.

    Chocolate Cornstarch Pudding

    INGREDIENTS

    • 1/2 cup white sugar
    • 3 tablespoons unsweetened cocoa powder
    • 1/4 cup cornstarch
    • 1/8 teaspoon salt
    • 2 3/4 cups milk
    • 2 tablespoons margarine or butter
    • 1 teaspoon vanilla extract

    DIRECTIONS

    1. In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat, and stir in margarine and vanilla. Let cool briefly, and serve warm, or chill in refrigerator until serving.

    1. Campur gula dan air dlm periuk jadikan gula hangus.
    2. Bila gula dah kekuningan masukkan santan pekat dah kacau sebentar hingga gula larut.
    3. Biarkan sejuk betul2.
    4. Bila santan dan gula hangus tadi dah sejuk, masukkan kuning telur, tepung kastard dan daun pandan. Kacau diatas api yg sederhana hingga mendidih. Bila sejuk kaya ni akan pekat.

    Bahan-bahan ( 8 biji )

    • 300g tepung gandum
    • 6g baking powder
    • 2g garam
    • 162g air suam
    • 6g dry yeast
    • 30g gula halus
    • 18g lemak sayur

    Cara-cara

    1. Masukkan tepung, baking powder dan juga garam. kacau biar serata.
    2. Campurkan air, dry yeast dan gula dalam bekas lain. kacau biar gula larut.
    3. Masukkan no.2 ke dalam no.1. Uli sehingga hampir licin.
    4. Masukkan pula lemak sayur. Uli sehingga licin. Buat bentu bulat.
    5. Penaikkan sehingga 2 kali ganda atau 40C selama 30 minit bagi sesiapa di negara sejuk.
    6. Pau1
      Utk uji naik ke tidak..Taburkan sedikit tepung di atas doh. Tekan dengan jari. Kalau tinggal lubang, maknanya doh dah naik.
    7. Pau2
      Tekan-tekan untuk keluarkan angin. Bahagikan kepada 8 bahagian. Buat bentuk bulat. Rehatkan selama 10 minit.
    8. Pau3
      Ambik sebiji doh, canaikan dan letaklah inti ditengahnya. Tutup rapat-rapat.
    9. Utk inti tu, boleh rujuk resepi pau dr mat gebu or pau kari ayam dr jun atau boleh juga letak apa saja inti ikut kesukaan masing-masing.
    10. Pau
      Saya letak inti krim coklat dan juga sardin. (Abihkan stok yg ada sebenarnya ni.. so takde sukatan yg spesifik utk inti)
    11. Bila dah siap isi inti, biarkan dalam 5 minit. Bila dah nampak naik sikit, bolehlah kukus.
    12. Kukus dengan api kuat selama 15~20 minit.. Masa tengah kukus jangan buka penutup kukusan.

    Untuk intinnye

    • --Inti--
    • 2 genggam kacang hitam / merah
    • 6 sudu gula pasir
    • sedikit minyak

    Cara-cara

    1. Inti : Rebus kacang dan gula sehingga lembut. Setelah air agak kering, masukkan sedikit minyak. Rebus sehingga air kering. Sejukkan.
    2. Larutkan gula dengan air suam.

    KEK PISANG 2 (lebih sedap & lebih masyuk)

    NGREDIENTS

    * 2 1/2 cups all-purpose flour
    * 1 tablespoon baking soda
    * 1 pinch salt
    * 1/2 cup unsalted butter
    * 1 cup white sugar
    * 3/4 cup light brown sugar
    * 2 eggs
    * 4 ripe bananas, mashed
    * 2/3 cup buttermilk
    * 1/2 cup chopped walnuts

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.
    2. In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.
    3. Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.

    Mashed Potato's Gravy

    Hmmmm...bahan2 nye:

    Air
    Chicken Stock(cube)
    Garam secukup rase.
    Black Pepper Powder (seriusly, jgn bubuh bnyk2, nanti pedas & pahit)
    Tepung Jagung
    Butter

    1. Jerang air, masukkan chicken stock & garam.....make sure rase ayam tak terlalu kuat & tak terlalu masin. sbb nnti kite akan pekatkan jugak kuah tu
    2. Bubuh black pepper
    3. Blend tepung jagung & air utk dijadikan paste. pastu masukkan dlm campuran tadi
    4. reneh sampai jadi pekat.
    5. bile dah pekat, masukkan butter secukup rase...(sekadar nak jadikan kuah nye berkilat & creamy)

    Apam Balik Sedap

    Bahan-bahan ( 4-5 orang )
    • 2 cawan tepung gandum
    • ½ cawan gula
    • 1 sudu teh soda bicarbonate
    • 1 sudu teh baking powder
    • Sedikit pewarna kuning
    • 1 biji telur
    • 1½ cawan air
    • Sedikit mentega/planta untuk mengoles
    • Bahan tabur : Kacang tanah yang sudah dikisar

    Cara-cara

    1. Mesin gula bersama telur hingga kembang,
    2. Masukkan soda, bicarbonate, air dan pewarna kuning. Mesin lagi hingga sebati.
    3. Masukkan tepung dan mesin lagi sehingga sebati. (ADUNAN SIAP)
    4. Oleskan planta di permukaan kuali & tuangkan 1 senduk adunan tadi, kemudian nipiskan.
    5. Biarkan seketika & sementara menunggu masak, taburkan bahan tabur di atas.
    6. Apabila cukup masak, angkat dan dilipat DUA sebelum dipotong. Selamat Mencuba
    nak sedap bahan tabur tu,. tambah jagung krim dlm tin dan taburkan juga sedikit gula castor...lagi satu kita boleh guna tepung naik sendiri ganti tpg gandum..jadi tak yah buh soda bicarbonate..

    guna fry pan yg tak melekat..

    pakai kuali biasa yg tak melekat(non-stick frying pan). Adunan tu tak perlu perap.
